Cracking eggs for egg whites for our macaron production this week. We crack each by hand and sift out each egg yolk by hand ensuring they don’t break. (You don’t want any egg yolk in your egg whites when making a meringue 😉).

We will use all of these whites but you’re probably wondering, @cheftidapichakron what do we do with the yolks? Good question! We actually have recipes that need only egg yolks, such as our Key Lime Curd for our Key Lime Tarts. But sometimes we actually trade with a friend in the industry! @chefreyeduong with @chimlanh uses fresh egg yolks for her aioli. So on occasion we trade because she can’t use egg whites for anything and instead of throwing them away when she cracks eggs for egg yolks, we use them and trade egg yolks for them! 🤗 Waste not! We don’t like throwing away product and this helps each of us with sustainability! It’s a win-win! 🤩

We had a blast at yesterdays World Down Syndrome Day Market hosted by @chefreyeduong and @chimlanh!

I never get the chance to take any photos but when @yungursaminor came by to pick up her beignet order, she brought her doggie with her, who aptly is named BEIGNET! 🐾 So I had to get a picture!!! 🤣

* 10” Traditional King Cake, cinnamon sugar filled
* 10” Cream Cheese filled King Cake, NEW for 2026, y’all have been asking for a Cream Cheese filled option and we now have it!
* Mini King Cakes, perfect for 1, each is individually packaged

Babies are placed inside all 10” King Cakes. If you don’t want the baby inside, please make the selection for the baby to be placed on the outside. You can always order additional babies as well.

If you’d like a baby with your Mini King Cakes, please note that the baby can’t fit inside and will be placed on top of your Mini King Cake.

Upgrade your King Cakes with our Mardi Gras Party Package, which includes festive beads and doubloons (coins) on top.

If you need to place a large order (more than 24 Minis or more than 12 - 10”) or need an order for AFTER 2/17, please call our Lake Highlands location (214-856-0166) to place your orders.
